Title: Christmas Honey Cookies

1cSugar
1/4cWater
1/2lbHoney
2tsAllspice
1tsCinnamon
1/2tsCloves
1/2tsNutmeg
4tsButter
4cFlour
1 Egg
2tsBaking soda
1/3cWater
1 Egg yolk

SPREAD 1/2 c heavy cream, hot 1 ts vanilla extract 1 1/4 c confectioners' sugar 6 oz chocolate, melted 6 oz almonds, toasted, ground

DOUGH: Brown 2 T sugar in a saucepan. Add 1/4 c water and stil till dissolved. Add the rest of the sugar, honey, spices and butter. Bring to a boil, stirring. Remove from heat. Cool. Add the flour, the egg, baking soda and about 1/3 c water. Knead the dough for a few minutes. Cover and let stand for 20 minutes. Roll out a rectangle on a floured board to fit a 12 x 15 cookie sheet, buttered and floured. Spread dough with egg. Bake at 350F for 15 minutes. Cool. Cut into two halves widthwise.

SPREAD: Mix the ingredients of the spread well. Spread over the bottom side of 1/2 of the cake. Cover with the bottom part of the second half.

Place a heavy book over it. Cover and let stand overnight. Cut out into small rectangular cookies. Store in an airtight box to prevent drying. These are best after a few days. Yields 4 dozen.
